1 full chicken cut in pieces
2 tbsp yogurt
2 tbsp ginger garlic paste
2 tbsp chili powder
2 tbsp coriander powder
2 tbsp garam masala
1 tbsp turmeric
5 green cardamom
6 cloves
2 bay leaves
1/2 inch cinnamon stick
1 black cardamom
1 star anise
1 mace (javitri)
4 green chili
1/2 cup fried onions
1 cup chopped cilantro
1 fried onion
2 tbsp ghee
1/2 cup oil
Salt
Food color (red and yellow optional)
Ingredients for Rice:
3 cups of rice
5 cups of water
1 green chili
4 green cardamom
3 cloves
1 lemon juice

Directions:
Clean the chicken pieces properly and keep it aside to remove water for few minutes. Then in a bowl add yogurt, ginger garlic paste, chili powder, coriander, turmeric, garam masala, turmeric, cardamom, cloves, bay leaves, cinnamon stick black cardamom, star anise, mace, green chili, fried onions, cilantro, and salt. Mix all these ingredients and add chicken pieces. Marinate it for an hour or more. Then heat oil in a pan and the mixed chicken and cook it in slow flame. Do not add water. Let the chicken cook properly until semi gravy is left in the pan. On another stove heat 5 cups of water. Into the water add 1 slit green chili, cardamom, cloves, lemon juice, and salt. Bring it to a boil and then add cleaned rice. Let it cook until water is dried.
Now check on the chicken and if it is cooked completely, then layer it with cooked rice. On top of the rice add fried onions and chopped cilantro (food color optional). Then seal around the pot with dough to capture the steam inside. Then turn the gas to low and cook for 30 mins. Place a thick pan underneath the biryani pot to avoid burning. Then after 30 mins remove the dough and open the lid and add ghee. Your biryani is ready to be served.
