Fried Rice


Ingredients:
2 cups of basmati rice
4 cups of water
1 bay leaf
4 cardamom
4 cloves
1 tbsp ghee
½ lemon juice
1 cup of mixed vegetable (I used frozen packet)
1 cup cubes paneer
Few cashews
½ onion thinly sliced
¼ cup oil
1 tbsp cumin seed
Salt

Directions:
Heat a pan and add water, ghee, bay leaf, cloves, cardamom, lemon juice, and salt. Bring the water to a boil and add basmati rice and cook on medium-low flame until water is dried. Turn off the stove and keep the rice aside. Then take a different pan and add oil. Then add sauté onion and when brown take it out. Then one by one sauté all the vegetables and paneer. After all the vegetables, paneer, cashew, and onions are sautéed add cumin seed to the oil. Then mix the rice and vegetables together in the pan. Mix use gentle motion. Use a light hand and mix little at a time. At this point check salt and add if needed. Then take it out in a serving dish and your fried rice is ready to be served.


Tips - use your favorite vegetables. Before serving the rice add a tbsp of ghee around it. This is will enhance the flavor and give your rice a nice aroma.
