Gobi Paratha







Ingredients for Cauliflower Stuffing
2 cups of chopped cauliflower
1 small chopped onion
2 serrano peppers
1/2 inch chopped ginger
1/2 tbsp ajwain or caraway seeds
Few chopped cilantro
1/2 tsp chili powder
1/2 tsp coriander powder
Salt to taste

Ingredients for Dough
2 cups atta or whole wheat flour
1 cup of water
Pinch of salt
Extra flour to roll the dough
Oil or ghee for paratha

Direction:
First, take the onions and squeeze out water from it.  Then in a bowl combine chopped cauliflower, onion, green chili, chopped ginger, cilantro, chili powder, coriander powder, ajwain, and salt. Keep it aside till dough is ready.
Take another bowl and combine whole wheat flour and salt.  Slowly mix in water and combine it together to form a dough.  Knead the dough properly and add water as needed.
Take a tawa or any other pan and heat it. As the pan gets heated take 1 inch of the dough and make it into a ball. Dust it with flour and roll it out. Make sure to keep the edges thin.  Then place the cauliflower mixture in the center and close all the edges.  Then dust it again with flour and gently roll it.  Once the dough is completely rolled out, place it on the tawa and cook each side thoroughly and when ready oil both sides.  Serve it warm with ghee on top.
