Pepper Jelly

Ingredients
3/4 cup chopped colorful bell pepper
1/4 cup chopped jalapeno pepper (mix with habanero peppers for extra kick)
6 1/2 cup sugar
1 1/2 cup vinegar
1 box Certo (2 packets in 1 box use both)
Glass jars

Directions:
In a bowl add few layers of tissue paper and then add all the chopped pepper. Leave it for an hour. This process will allow all the water from peppers to be absorbed by the tissue paper.

Take a pot add 6 1/2 cup sugar, 1 1/2 cup vinegar, and all the peppers and bring to a boil. Make sure the color doesn't change and then add 1 box of Certo. After adding Certo do not wait long and quickly start pouring hot liquid to glass jars. Close the lid and put the jars upside down. Grab thick towels and give the jars a shake or else all the peppers will settle down and won't be spread out. Repeat the step 2-4 times or until the peppers are well settled and not moving around. At this point your homemade pepper jelly is ready. You can tie a ribbon and give it to friends and family for any occasion.
