Cocktail Samosa





Ingredients:
Fillo dough
3 small potatoes
1/2 tsp cumin seed
1/2 tsp crushed coriander seed
1 tsp ginger garlic paste
2 green chili chopped
1/2 tsp kasmiri chili powder
1/2 tsp chaat masala
1/2 tsp amchor/dry mango powder
1/2 garam masala
3 tbsp oil
Salt to taste
Few chopped cilantro
2 tbsp all-purpose flour
3/4 cup water
Oil for frying

Directions:
Boil the potatoes in a pot or pressure cooker.  Then peel off the skin and roughly chop the boiled potatoes.  Take another pan and heat oil.  When the oil is hot add cumin and crushed coriander seed.  Then add ginger garlic paste and let it cook till the raw smell is gone. Then add green chili and cook for 1-2 mins.  At this point reduce the heat and add red chili powder, chaat masala, mango powder, garam masala, salt, and chopped coriander.  Cook the masala over low flame. When masala is cooked properly add in the boiled potatoes and mix it all together.

Take fillo dough room temperature and cover it with a wet cloth.  In a separate bowl add all-purpose flour and water.  Form a slightly loose paste (this will be the glue to stick the dough opening). Then rub the paste onto 1 sheet of fillo dough and place in the stuffing. Start from 1 corner and add the filling and keep turning to form a triangle. Then add it to oil and fry it.  When the samosas change the color to brown, take it out from the oil.  Repeat the process until all samosas are fried up.  Enjoy with chutney, warm chai, and great company.
