Mutton Curry


Ingredients:
1 lb mutton small pieces
6 cardamom
6 cloves
2 bay leaves
1 black cardamom
1/2 inch cinnamon stick
1/2 mace also known as javitri
1 star anise
2 tbsp ginger garlic paste
1 onion sliced
2 tbsp chili powder
2 tbsp coriander powder
1 tsp turmeric
1 tsp garam masala
1 tsp kasuri meethi
1-2 cups hot water based on gravy consistency
1 tbsp fried onions
2 tbsp yogurt
Chopped cilantro
Salt to taste

Directions:
First take the mutton and wash it couple of times with luke warm water.  Then add 2 tbsp yogurt and keep it aside.

Now heat oil in a pan and add cloves,  green cardamom,  black cardamom,  cinnamon stick,  bay leaf,  star anise and mace.  Saute all the whole spice in oil for a minute.  Then add in onions and cook till translucent.  When onions get slightly brown add in ginger garlic paste.  Cooked it for 3 mins or till color changes.  Then add in the mutton and mix it well. Keep sauteing it till meat changes color.  Then add in all the powdered masalas (turmeric,  chili,  coriander,  kasuri meethi,  salt and garam masala). Mix it all together to coat the meat and let it saute for 3 mins.  Then add in 1-2 cup of water and pressure cook it till 3-4 whistle (I cooked in instapot under meat setting for 20 mins). Then let it cool and release the pressure.  Open the lid and add in fried onions and chopped cilantro.  Let it cook for 2 mins and your curry will be ready.
