Ingredients
6 cups of shredded carrot
1 (14 oz) can condensed milk
1 1/2 cup milk
1 tsp cardamom powder
cashews, almonds, raisins per choice
3 tbsp ghee
1 tbsp extra to fry the nuts and raisins
Directions:
Heat a pan and add in tbsp ghee and saute cashew, sliced almonds and raisins. Once slightly brown take it out and keep it aside. Then in the same pan heat 1 tbsp ghee and add shredded carrots. Now cook the carrots till all the water has evaporated. Keep stirring and you will notice the carrots have reduced to half the size. At this point add in 1 can of condensed milk, 1 1/2 cup milk and cardamom powder. Mix it well and let it simmer till the milk is reduced and carrots are soft. At this point add in the cashews, almonds and raisins. Serve it warm and enjoy with your family.
