Tawa Naan

Ingredients:
2 cups of all purpose flour
1 packet of instant yeast (.25 oz) or 1 tsp
1/2 tsp sugar
1 cup warm water or more to knead dough
1/2 tsp salt
1 cup extra flour for rolling the dough
1 cup extra water to stick the dough to the pan

Topping:
chopped chili, cilantro, chopped garlic or onions.

Directions:
In a bowl add instant yeast packet, sugar and warm water. Mix it well to active the yeast. Then in another bowl add 2 cups of all purpose flour and salt. Combine it together and slowly add in the water with yeast mixture. Now knead it all together for 10 mins to form a soft dough. If the dough is sticky add more flour by dusting little bit at a time. Once the dough is perfectly formed, close it with a lid and keep it aside for 20 mins. After the dough has rested divide it into equal portions to form small balls. Then take one of the ball and dust it with flour. Now with rolling pin roll it out into oval shape. At this point if you like to add any of the toppings then add it on top and press it with rolling pin. If you add topping then rub water at the bottom of the dough and place the water side down on tawa. If you didn't add toppings then just add water to either side and place the water side down.

Heat a tawa or pan and add the water side down. When you see the bubbles flip the tawa onto the flame. Make sure that your naan is not touching the flame. Then hold it like that till color starts to change slightly. You will notice the naan will start to fall off the tawa. At this point flip the tawa and with spatula take the naan out and add ghee or butter on top. Serve it hot with your favorite dish.
