Ingredients:
2 boiled potatoes
1 small chopped onion
1 chopped tomato
2 chopped green chili
1 tsp cumin seed
Pinch of asafoetida
1 tsp ginger garlic paste
1/2 tsp turmeric
1/2 tsp garam masala
2 cups warm water
1 tsp dry kasuri methi
3 tbsp oil
Salt to taste
Directions:
Heat oil in a pan and add in cumin seeds and asafoetida. Let it saute for a minute and then add chopped onions and green chili. Saute until obtains change color and start to sweat. At this point add in ginger garlic paste and cook it until raw smell is gone. Then add in the turmeric powder, garam masala and salt. Saute it for few mins to cook the masala. Now add in the chopped tomatoes and let it all mix together for 3 mins. Then add in 2 cups of water and close it with a lid. Bring it to a boil on high heat for 5 mins. Then take the lid off and add the chopped boiled potatoes. Mix it well with gravy and add in kasuri meethi and cook for 5 mins with lid on. After 5 mins take the lid off and mash few of the potatoes. This will make your gravy thick. Adjust the consistency based on your taste. Your potato curry is ready.
