Ingredients:
1 lb chicken cut in small pieces
400g noodles (I used Ying Yang brand sooji noodles)
1 tbsp chili powder
1 tbsp plain yogurt
1 tsp ginger garlic paste
1 tsp chaat masala
salt to taste
2 tbsp red chili sauce
2 tbsp green chili sauce
1 tbsp ketchup
1 tbsp vinegar
1/2 cup soy sauce regular (if you have dark soy sauce then use 1/4 cup)
1/2 onion sliced
1/2 of a cabbage sliced
1 green bell pepper sliced
3 green chili chopped
Oil 5 tbsp
Direction:
In a pot boil water and then add 1 packet of noodles. Bring it to a boil and when the noodles are cooked 90% drain the water out. Then wash the noodles in cold water. This process will help stop the cooking process. Then add few drops of oil and toss the noodles. By following this step the noodles will not stick to each other.
In a bowl add cut chicken pieces, chili powder, yogurt, ginger garlic paste, chaat masala and salt to taste. Mix it all together and coat the chicken pieces. Keep it aside for 15 mins. Then heat a pan with 2 tbsp oil and in batches saute the chicken pieces. Once all chicken pieces are done in the same pan add 1 tbsp oil and saute onion and green chili. Saute it for 2 mins and then add in the bell pepper and cabbage. Let it cook for 2 mins then add in the noodles and 2 tbsp oil. Mix it all together and then add in red chili sauce, green chili sauce, ketchup, vinegar and soy sauce. Saute it for 5 mins and then add 1/2 tsp chaat masala. Let few of the noodle char at the bottom to give it a smoky flavor. Then mix it all together and your chicken chowmein is ready.
Tips: 1. Wash your chicken with 1 tsp turmeric powder. This will help eliminate chicken smell.
2. If your chowmein is dry add a tbsp oil to make it shine and non sticky.
3. Before eating add few drops of red and green chili sauce to your chowmein (your plate not the whole dish) for extra spice and kick.
