Ingredients:
1 cauliflower
2 eggs
1 cup mozzarella cheese
1/4 cup Parmesan Cheese
1/4 tsp garlic powder
1/4 tsp dried oregano
1/4 tsp dried basil
Sauce:
Rao's Tomato Bail (I love this brand's pizza sauce)
Toppings:
Onions, bell pepper, chili and tandoori chicken (follow my tandoori chicken recipe)
Directions:
Cut cauliflower into small florets and use a chopper or grater to chopped. After chopping I had 4 cups of cauliflower. Now heat a pan and add the chopped cauliflower without oil and let it cook and reduce to half the size (2 cups). You will notice cauliflower has become dry and at this point add in garlic powder, oregano and basil. I did not add salt because cheese already had bit of salt in it. But if you like add just a pinch of salt. Then remove the cooked cauliflower from heat and let it cool. Take a bowl and beat 2 eggs and then add the cauliflower, mozzarella cheese and parmesan cheese. Take a baking try and add the cauliflower base to the try and give it the round shape. Make sure to press down and even out the base. Then with a fork poke few holes. This will help in moisture of escape and your base won't be soggy. Do not make the base thick it will not cook properly, make a thin layer. Heat the oven at 350 degree F and bake it for 10 -15 based on the pizza base thickness. You will notice the color change and the edge will get slightly brown take it out of the oven.
Now add pizza sauce and start layering with your favorite toppings and bake for another 10 mins and enjoy with family.
